Although commonplace at the dinner table today, salt was once a highly sought after commodity in ancient times.  The use of salt in the preservation of food has long been considered a contributing factor in the development of civilization.  Over time, salt became a metaphor for virtue and honor.  From this, phrases such as 'above the salt' were born.
 
The placement of the salt cellar on the table symbolized the social status of those at the table.  It was traditionally placed in the center of a long rectangular table.  Those that sat 'above the salt'  and closest to the host at the head of the table were considered to be of higher stature.  To share the salt cellar with the host was considered to be a sign of great respect.
